Nous avons parl\u00e9 d\u00e9j\u00e0<\/a> que la pizza a eu ses d\u00e9buts au Moyen-Orient, mais c\u2019est en Italie, particuli\u00e8rement \u00e0 Naples, qu\u2019elle a acquis les caract\u00e9ristiques qu\u2019on conna\u00eet aujourd\u2019hui. Toutefois, c\u2019est aux \u00c9tats-Unis que la pizza devient extr\u00eamement populaire et l\u2019une des options les plus d\u00e9mocratiques et plus appr\u00e9ci\u00e9es dans tout repas.<\/p>\n

Au d\u00e9but du 20e si\u00e8cle, les immigrants italiens arriv\u00e9s en Am\u00e9rique du Nord ont emport\u00e9 avec eux les recettes d\u00e9j\u00e0 r\u00e9pandues dans leur pays d\u2019origine. Ils se sont install\u00e9s surtout dans les r\u00e9gions de New York et Chicago et, \u00e0 l\u2019\u00e9poque, les pizzas \u00e9taient vendues en tranches, dans de petites boulangeries et caf\u00e9s de quartier.<\/p>\n

En 1905, l\u2019italien Genaro Lombardi a ouvert la premi\u00e8re pizzeria \u00e0 New York. Dans les ann\u00e9es 1930, il a ajout\u00e9 des tables et chaises au restaurant, qui offrait aussi d\u2019autres plats d\u2019origine italienne. Au long des 25 prochaines ann\u00e9es, des pizzerias se sont ouverts \u00e0 travers le pays, surtout \u00e0 Boston, acqu\u00e9rant leurs propres caract\u00e9ristiques et ajoutant des variations locales aux recettes.<\/p>\n

Apr\u00e8s la Seconde Guerre mondiale, la pizza est devenue \u00e0 la mode aux \u00c9tats-Unis, quand les soldats am\u00e9ricains ont rentr\u00e9 chez eux en parlant du plat qu\u2019ils avaient mang\u00e9 en Italie. La pizza est arriv\u00e9e au Br\u00e9sil aussi par les mains des immigrants italiens, arriv\u00e9s au port de Santos. La premi\u00e8re pizzeria du Br\u00e9sil a \u00e9t\u00e9 ouverte en 1910, dans le quartier du Br\u00e1s, \u00e0 S\u00e3o Paulo. Avant l\u2019ouverture du restaurant, la pizza \u00e9tait d\u00e9j\u00e0 consomm\u00e9e dans les rues, en collation, tout au long de la journ\u00e9e. Elles \u00e9taient vendues comme en Italie, par des gar\u00e7ons qui portaient de petits tonneaux de cuivre remplis de pizzas d\u00e9j\u00e0 pr\u00e9par\u00e9es et maintenues au chaud par des braises de charbon.<\/p>\n

Malgr\u00e9 ses origines italiennes, la pizza \u2013 comme la ville de S\u00e3o Paulo elle-m\u00eame \u2013 a re\u00e7u l\u2019influence d\u2019autres groupes ethniques de mani\u00e8re tr\u00e8s positive. Dans les ann\u00e9es 1920, les premiers pizza\u00efolos d\u2019origine non italienne sont apparus, ajoutant au disque l\u2019assaisonnement de leurs pays et r\u00e9gions. Aujourd\u2019hui, 80 % des pizza\u00efolos de la ville sont du nord-est du Br\u00e9sil.<\/p>\n

C\u2019est dans les ann\u00e9es 1950 que la pizza est devenue le chouchou du Br\u00e9sil, avec la diffusion des pizzerias du nord au sud du pays. Aujourd\u2019hui, elle fait partie du menu de la plupart des Br\u00e9siliens. \u00c0 nos jours, S\u00e3o Paulo est la deuxi\u00e8me plus grande ville consommatrice de pizza au monde, la premi\u00e8re au podium \u00e9tant New York. Selon le Syndicat des h\u00f4tels, restaurants, bars et similaires de la ville, environ 43 millions de pizzas sont consomm\u00e9es par mois dans la r\u00e9gion m\u00e9tropolitaine de S\u00e3o Paulo.<\/p>\n
